Our Original Egg Pizza Breakfast Blend

This is one of my favorite quick and easy breakfast recipes. This low-calorie breakfast 'stir fry' is loaded with vegetables and protein creating a perfect start to your day! The combination of the gooey egg yolk and the tomato sauce creates a shockingly delicious sweet and savory flavor.
I was inspired to create a meal like this after tasting a similar combination of a sunny side up egg as a pizza topping. With a short prep time and a minimum of only 4 ingredients depending on how many vegetables you decide to throw in, this breakfast blend is definitely worth trying! You will need:
1 cup frozen cauliflower
Vegetables of your choice (I used 1 medium carrot, 1 medium zucchini, and 1 medium bell pepper)
1 egg
1/2 cup of tomato sauce (I use Rao's Garden Vegetable Sauce)
Optional seasonings (I used salt, pepper, and Trader Joe’s 21 seasoning salute)
How:
Note: Cooking the Frozen Cauliflower in the oven is optional but will give you the best results. Will take an extra 5-10 minutes, but is entirely worth the fluffiness!)
Preheat the oven to 350
While oven is heating, wash your vegetables of choice and chop them into small pieces
Place frozen cauliflower into the over for 15 minutes
Place vegetables on a nonstick pan over medium heat
Once vegetables are golden brown, put them aside
Make an over easy egg. Once finished, place it onto the plate you will be using but make sure you are able to place it on top of your stir fry at the end (I kept the spatula under the egg on the plate)
Remove cauliflower (assuming the 15 minutes are up) and mix it in with your vegetables on medium heat creating your ‘stir fry’
Add ½ cup of tomato sauce and mix the stir fry for 45 seconds or until evenly spread
Once evenly spread, you will put the mixture onto your plate, placing the over easy egg on top
